How to make

brush mustard to the trimmed brisket.
Season it with a proper amount of salt and pepper.
Bake in an oven at 110°C until the internal temperature reaches 70°C (about 4 hours, periodically spraying with apple juice).
Wrap in aluminum foil and return to the oven until the internal temperature reaches 93°C (wrapping thoroughly is key).
Let it rest in the turned-off oven until the internal temperature drops to 65°C.
Brisket Kimchi jjigae Recipe (serves 2)
Saute 200g of pork in an oiled pot for 1 minute.
Add 200g of kimchi, 1 tablespoon of fish sauce, and 400g of water.
Boil on medium heat for 10 minutes.
Top with brisket and green onions to finish.
