Cannoli is Italian dessert. Like everyone else, I got to know cannoli in the movie 'Godfather'. 'Leave the gun, take the cannoli' lingered in my heart, so I really want to go Italy and eat cannoli. But I can't go right now. So I made it in my home with dalgona
Cannoli with Dalgona
Ingredients
Dough Ingredients (2~30 piece)
240g AP flour
2T sugar
pinch of salt
2T lard (replaceable with. butter)
2 egg yolk
1T vinegar
60g red wine (if you afford it, use Marsala wine)
Ricotta filling Ingredients
400g ricotta cheese
200g powdered sugar
1t cinnamon
pinch of vanilla extract
100g chocolate chip
orange zest
Topping Ingredients
chocolate chips
dalgona
pistachio
How to make
Dough
Mix all ingredients until a rough ball dough forms and knead 5 minutes
Wrap in plastic wrap and place it fridge for 10 minutes
Spread the dough thinly using a rolling pin and Fold it into 3 pieces (x3)
Spread really thinly.
Take your dough round, place the cannoli mold into the center and lightly put some egg white on one side of the dough and place the egg white side over the other to seal it.
Fry in 190'c(375'F) oil for 2~3 minutes until golden brown
let it cool and remove it from the mold
Cannoli (small size 20~30 piece)
Drain the ricotta cheese in the strainer for overnight (most important thing in making cannoli. If ricotta cheese is so smooth, your filling will be dripped when you hold cannoli)
Strain ricotta cheese and mix all filling ingredients and keep it cool in fridge.
Fill the cannoli with ricotta filling and dip it with chocolate chips, pistachios, and dalgona
Lastly, sprinkle sugar powder
Dalgona
Put 2T sugar in small dalgona pan
Stir sugar on low heat until sugar is melt
If sugar is melt, add pinch of baking soda and mix factly for 15 second
Pour into a flat bowl and press

Cannoli is amazing. This dessert is so powerful.
Because it is so powerful, when I eat first bite, it's so delicious.
But taste so powerful, heavy, I just want to eat only 1 cannoli with coffee
