Four or five years ago, there was a trend of eating all foods with cheese in Korea. During this trend, cheese jju-kkumi is born.
Jju-kkumi Fondue (Webfoot Octopus Fondue)
T = Tablespoon
t = teaspoon
Ingredients
Fondue Ingredients (2 pieces pancake)
150g gruyere cheese
150g emmental cheese
1 garlic
100ml white whine
nutmeg (optional)
pepper
corn starch (for emulsion)
Jju-kkumi bokkeum (stir-fried octopus)
300g webfoot octopus
gochugaru
gochujang
sugar
pepper
sesame oil
soy sauce
minced garlic
corn syrup
beef dasida (optional but recommend)
How to make
Fondue
Crush garlic with the back of a knife
Rub garlic in a fondue pot
Using a cheese grinder, grate Gruyere and Emmental cheese and put it in a pot
Add 100ml white wine and 1T corn starch
Simmer on low low heat and melt the cheese (if the heat is high, emulsion is broken)
If cheese is melt, put nutmeg, pepper and 1t salt
Ju-kkumi bokkeum (stir-fried octopus, 2 serving)
Put webfoot octopus and 2T salt, 2T flour
Scrub the webfoot octopus for 1 minutes
Wash webfoot octopus clean with water
Add 1t beef dasida, 3T gochugaru, 3T sugar, 1t soy sauce, 1T minced garlic, 1T corn syrup, 1T gochujang, 1T sesame oil and pepper and mix
Stir-fry over high heat for 3 to 4 minutes(At this time, it tastes better if you use torch)

I think cheese fondue and Jju-kkumi have their own taste and they are so delicious.
However, there was no synergy when the two met
I've never had octopus and can't imagine the taste. To me the appearance of this dish is very exotic. I will admit that I could try it despite the lack of synergy with the cheese fondue.🫕🐙😌
