There are dumpling in China, pierogi in Poland, empanada in Spain. And In South Korea, there is 'mandu'. There are many kinds of mandu, but this post introduces the recipe for kimchi mandu.
Kimchi Mandu
T = Tablespoon
t = teaspoon
Ingredients (2~3 serves)
400g pork (other meats can be substituted)
200g kimchi (adjust to taste)
Kimchi juice
2 garlic cloves (or 1 tablespoon minced garlic)
Half an onion (75g, adjustable to taste)
1 green onion (50g, adjustable to taste)
Soy sauce
Black pepper
Sesame oil
Bread flour (AP flour can be used)
Salt
How to make
Mandu wrapper recipe
Mix 200g of bread flour with 1 teaspoon of salt.
Heat 100g of kimchi juice in the microwave for 2 minutes, then pour it into the flour.
Add 1 tablespoon of oil and mix.
Knead the dough for 10 minutes.
Let the dough rest at room temperature for 1 hour or refrigerate for 24 hours
Divide into 15g pieces and roll them out with a rolling pin into circles.
Kimchi mandu recipe
Mix 400g of pork, 200g of minced kimchi, 1 tablespoon of minced garlic, half a minced onion, 1 minced green onion, 2 tablespoons of soy sauce, 2 tablespoons of sesame oil, 1 teaspoon of salt, and some pepper to make the dumpling filling.
Fill store-bought or homemade dumpling wrappers with the filling to taste.

Steam over medium heat for 10 minutes.
Enjoy as is or dip in soy sauce.
Tips or Notes:
When steaming dumplings in a steamer, placing parchment paper or foil underneath prevents them from sticking.
It might be better to buy pre-made mandu wrappers
