Kimchi Galbi Grilled Cheese

I have never eaten such a delicious sandwich before. I highly recommend you make this.


I love the movie Chef (2014 film) so much. In this movie, There's a scene that chef make grilled cheese for his son. I love these scene so much. So in my head, grilled cheese is floating around. In these moment, I mix grilled cheese with Kimchi and Galbi.






 


Kimchi Galbi Grilled Cheese



T = Tablespoon

t = teaspoon



Ingredients (for 4 serving)


Galbi jjim (Korean Braised Short Ribs)

  • 800g of boneless beef ribs

  • 1 onion

  • 1 green onion

  • 1T of mince garlic

  • 1/2 pear

  • soy sauce

  • sugar

  • corn syrup


Kimchi Chutney

  • 200g kimchi

  • 1 onion

  • 1 tomato

  • tomato sauce (optional, tomato sauce sold at the supermarket for making pasta or pizza)

  • sugar

  • vinegar


Kimchi Galbi Grilled Cheese

  • bread

  • mozzarella cheese

  • cheedar cheese

  • butter

  • kimchi chutney

  • galbi jjim


 

How to make


Galbi jjim (Korean Braised Short Ribs)

  1. Put beef in greased pan over high heat

  2. Searing beef until brown on all sides (for maillard reaction)

  3. Take out the meat, Put the onions and green onions in pan and stir-fry for 3~5 minutes on medium heat

  4. Add 1.5L water and 1T minced garlic, 1/2 pears, whole pepper, 120ml soy sauce, 100g corn syrup and 60g sugar and simmering for 30 minutes

  5. Strain soup by stainer

  6. Put grilled beef and soup in a pot available in the oven and put it in a 140'c (300'F) oven for 2 hours (braising)



Kimchi Chutney

  1. Cut 1/2 onions and 1 tomato

  2. Add onion and 2T oil in a pan

  3. Stir-fry on low heat for 10 minutes (to make caramelized Onion)

  4. Turn the heat to medium heat and put 200g of kimchi and stir-fry it for 3 minutes

  5. Add 1 tomato and 2T tomato sauce and stir-fry until dry

  6. Add 1T of sugar and 2t of vinegar and stir-fry for 1 minute


Kimchi Galbi Grilled Cheese

  1. Spread butter on bread and cook it in pan over low heat until brown

  2. Put mozzarella and cheddar cheese on top of bread (You can add the whatever cheese you like)

  3. Put kimchi chutney and galbi jjim on top and cover with bread

Tip


If the cheese hasn't melted, you can try the following methods

  1. Microwave

  2. Oven

  3. Put 1T of heat into a pan and cover it with a lid (steam effect)

This is incredible sandwich.

When I did first bite, I was really shocked because of the taste.
